Need clear instructions for local (non-cloud) setup

I have been trying to get istio working on my local machine for quite awhile. I imagine there are a number of students who do not have access to cloud resources either due to cost or limitations on their workplace infrastructure.

Aside from a short note to "use MetalLB" we are left on our own to figure this out. I have tried to use minikube, orbstack, and kind without full success. I have been able to get the istio-ingressgateway running, however I'm having trouble with the dns resolution of hostnames within the local cluster.

The command specified in lab 4 to curl with the "Host: httpbin.com" does not work as the hostname is not resolved.

Although I'm sure instructors might say this is "outside the scope" of the course I feel that clear instructions for running things locally is crucial for many students. I've been looking at a wide variety of resources and have not been able to figure this out for myself.
