Network software proxy packages that run on linux platforms

First this is my first post on this forum, so if I make any mistakes I will correct the problem and learn from it.

I have an IBM zseries mainframe that communicates with applications on other mainframes using TCP/IP, FTP etc. what I am looking for is a network software proxy server that would reside on a Linux platform that would allow me to call an "exit" for lack of a better term that would allow me to alter specific bits in the IP Packet header before forwarding the packets on to the destination ip address.

Is anyone aware of any such proxy software server applications that would meet my requirements? If so could you please let me know?
