Is there any reason that a simple Ubuntu command like 'tree' would not work on VirtualBox?

no. As long as it is installed on the VM. (sudo apt-get install tree). Not all VMs will be the same depending on the packages installed. For this course you can download ready-for.sh from https://training.linuxfoundation.org/cm/prep/ and follow the instructions:

chmod +x ready-for.sh ; ./ready-for.sh --install LFS201

and you should have tree installed.
